Name something you finally tried after many visits to WDW.
It can be an attraction, type of food, restaurant, etc. It has to be something you have purposely passed up on many previous visits.
For me, it would be Dole Whip. I've passed that stand a zillion times on previous trips, but I finally tried it this time...and it was yummy. I didn't think I'd like it in the past, but now I can't wait to go back and have another!

It was on our last but one trip (so September/October 2007).
We'd previously avoided EMH as we've found morning tends to result in bigger crowds once EMH ours are finished and we never stay in parks long enough to use the evening EMH.
This time though, we ate in Brown Derby in DHS and, by the time we came out, EMH was just kicking in. We grabbed wrist-bands and stayed in the park (mainly to walk off our dinner) and found a great atmosphere.
The big rides were too busy to do (ToT and RnR both had huge waits) but it was nice just to walk around.
We also did Typhoon Lagoon on morning EMH and got almost every slide and attraction done by the time general admission started!
Now, we use morning EMH to do new rides like TSM and then park-hop to somewhere quieter afterwards. We also use evening EMH for a stroll after dinner (nice to get a boat from the Poly to MK after a meal at Kona Cafe and enjoy Main Street in the dark).
I finally tried an in-room gift package at WDW! For our 13th Wedding Anniversary I surprised my husband by getting the Disney Florist to leave the 'From Mickey and Minnie With Love' package in our room. It was absolutely wonderful!

My g/f and I have just recently began visiting the resorts we've never been to. I dunno what this says about us but we're trying to grab a snack or meal from every resort.

This one isn't really WDW related (other than the fact we did it in Orlando whilst staying at WDW) but...
We finally tried an airboat ride at (almost) WDW.
We'd been threatening to do one for years but you know what WDW is like. So much to do and so hard to tear yourself away from.
Last May though, we finally managed to do it and headed down to Cyrpress Lake in Kenansville (just past St Cleod, about an hour out of WDW) to do an hour long airboat ride where we saw bald eagles, a whole range or wading birds and loads of gators - oh, and more mosquitos than I thought could possible exist in the world, let alone one lake (thankfully the boat mostly goes too fast for them to settle)!
On our last trip we stayed at a Disney resort for the first time and loved it! Would definately do it again!

We stayed at a Disney hotel for the first time. We might have to save up more for the next time to stay at a "quieter" one. Loved the little perks of staying on property: refillable mugs, transport, the Disney welcome at check-in, the ease of check-out, Disney's Magical Express.
We also finally got around to check out some of the other resort hotels. In the past, always wanted to take a peek at the Polynesian and Grand Floridan.
I finally decided to try Mission Space (it was the calmer version, but still). And I actually enjoyed it. I definitely would go on it again

It was DELICIOUS!!!! Definitely recommend them, however they are pretty large! My husband were full after just splitting one!

I had one years ago which put me off since then. It was full of sinew and gristle and not at all nice. I've heard such good things since though - I'll have to try one again next time.

That's exactly how I imagine it. I don't like dark meat, anyway. And I don't like eating chicken or turkey without a fork. In fact, I like using a fork for most food, even when it doesn't call for one.

I couldn't bring myself to eat it without a fork... A little too barbaric for me... I agree with your fork stipulation!
