    Whispering Canyon Chuck Wagon Angus "Bacon & Egg" Burger

    Chuck Wagon Angus "Bacon & Egg" Burger (Whispering Canyon Cafe)
    with Tillamook Cheddar and Chipotle Ketchup

    One of the best burgers I've had at Disney, here is the dish I'm attempting to copy, with a few of my own minor modifications.

    For this recipe I'd decided to spice up the fries a bit with bacon and a blue cheese cause. There are three main steps to this. The ketchup, the fries and the burger.

    Chipotle Ketchup

    6 oz can of Tomato Paste
    1/4 cup Honey (I chose wildflower, but any type will do)
    1/2 cup White Vinegar
    1/4 cup Water
    1 tbsp of chopped and strained Chipotle Peppers
    3/4 tsp Kosher Salt
    1/4 tsp Onion Powder
    1/8 tsp Garlic Powder

    Step 1) Chop the chipotles finely.

    Step 2) Strain to remove the seeds, etc.

    Step 3) Add all ingredients to a small saucepan and cook over medium heat, stirring regularly.

    Step 4) Once it comes to a boil, reduce heat to medium low and simmer for 20 minutes to thicken. Set aside.

    Blue Cheese Sauce

    Fries (made fresh or frozen)
    2 slices of bacon
    1 small to medium shallot
    2 cloves of garlic
    1 tbls unsalted butter
    1 cup blue cheese crumbles
    1/2 cup whole milk
    1 tsp fresh black pepper

    Step 1) Chop the shallots and the garlic finely.

    Step 2) Melt the butter over medium heat in a small to medium saucepan and then saute the shallots and garlic for about 4 to 5 minutes.

    Step 3) Add the rest of the ingredients and stir, over medium heat until the cheese melts and begins to bubble.

    Step 4) Set aside.

    Final Burger

    Angus Hamburger Patties
    Kaiser Rolls (Disney uses these, but really any burger bun would work fine...but I find the texture and solidity of the Kaiser works well with the egg)
    1 egg per sandwich
    1 slice of bacon, halved, per sandwich
    Iceberg Lettuce
    Fresh Tomato
    White or Red Onion
    Tillamook (or some other extra sharp) Cheddar

    Step 1) Preheat your broiler to low. Peel off a leaf of the Lettuce, Slice the Tomato, Slice the onion. Set Aside.

    Step 2) Cook the burger in a skillet or on a grill, seasoned lightly with black pepper, salt, garlic powder and onion powder.

    Step 3) In another skillet, slice the bacon in half and cook it.

    Step 4) When the bacon is done, chop up the two slices needed for the fries, and cook it into bacon bits.

    Step 5) Cook the egg, sunny side up, and no more than over medium, lightly seasoned with salt.

    Step 6) Slice the Kaiser Roll and spread butter on both halves. Broil for a few minutes until the edges start to brown.

    Step 7) Slice the cheese thinly.

    Step 8) Add a slice or two of cheese to the bottom half (heel) of the broiled bun, then add the patty, then another slice or two of cheese. Broil for another 30 seconds to a minute to melt the cheese.

    Step 9) Fry the French Fries, then drizzle them with the blue cheese sauce and the bacon bits.

    Step 10) Plate and DEVOUR! (give yourself a generous helping of the ketchup on the top bun. MMMM)
