    Jiko's Cucumber Salad with Watermelon Vinaigrette

    Tonight, I'm in the mood for soup and salad.

    So...

    Tomato, Cucumber and Red Onion Salad
    with Vanilla Dressing and Melon Vinaigrette

    Vanilla Dressing

    Ingredients
    1 cup white balsamic vinegar
    1 Tbls vanilla extract
    1/2 cup Extra Virgin Olive Oil
    1/4 tsp fresh ground black pepper
    1/2 tsp kosher salt



    Step 1) Mix all ingredients into a medium bowl and whisk together.



    Melon Vinaigrette with Cottage Cheese and Basil Chiffonade

    Ingredients
    1 package of cantaloupe chunks
    1 package of seedless watermelon chunks
    1/2 tsp kosher salt
    1/2 tsp fresh ground black pepper
    Juice from one lemon
    1 cup Extra Virgin Olive Oil
    1/2 cup cottage cheese
    5 fresh basil leaves



    Step 1) Juice the cantaloupe and the watermelon chunks. I had to use an immersion blender, and then strain them. A normal blender would work just as well, or if you have a juice machine, you can use that.





    Step 2) Pour 1/2 cup of the cantaloupe juice and 3/4 cup of the watermelon juice into a large bowl. Add the salt, pepper and lemon juice and mix together.



    Step 3) Whisk in the olive oil.



    Step 4) Just before serving, mix in the cottage cheese and basil leaves.





    Final Dish

    Ingredients
    2 hothouse cucumbers
    2 tsps kosher salt
    1 small to medium red onion
    4 roma tomatoes
    Vanilla Dressing (recipe above)
    Melon Vinaigrette (recipe above)
    1/2 pound arugula
    Black pepper
    Whole nutmeg



    Step 1) Cut the cucumbers in half and deseed with a spoon.



    Step 2) Slice thinly and add to a large bowl. Add the salt and mix well, then sit for a half hour to 45 mins at room temp to "cure" the cucumbers. They should wilt and "pickle" slightly.



    Step 3) Add the arugula to a separate bowl and toss with 4 Tbls of the vanilla dressing until well coated. Set aside.



    Step 4) Drain any water from the cucumbers and mix in the red onion (thinly sliced) and tomatoes (chunked). Add the rest of the vanilla dressing to the bowl with the cucumbers, onions and tomatoes, and mix. Salt and pepper to taste.



    Step 4) To serve, mound the cucumbers, onions and tomatoes in the center of a plate or large shallow bowl. The easiest way to do this is to pack a small bowl with the mixture and place it upside down int the center of the plate.





    Spoon the vinaigrette around the edge of the salad, with some of the curds from the cottage cheese. Top the tomato/onion/cucumber mixture with arugula.

    Clean the edge of the plate with a paper towel (if ya wanna be fancy!)





    Then grind fresh black pepper and some fresh nutmeg over the top of the arugula and around the edge of the plate.

    Step 7) DEVOUR!

    It's really not that hard at all. Even easier if you have a juicer or an immersion blender!

    If organised (mise en place), the whole recipe takes about 15 minutes to make.
