    Liberty Tree Tavern - William Penn Pasta

    Liberty Tree Tavern


    Ingredients
    1 lb package of rigatoni or penne pasta
    1 package of chicken breast tenderloins
    1 oz of fresh Basil (1 package from Publix)
    1/2 oz of fresh Tarragon (1/2 package from Publix)
    1/2 cup of Canola Oil
    1/2 tablespoon Kosher Salt
    1/2 tablespoon Fresh Ground Black Pepper
    1 quart of heavy cream
    1 pint of heavy cream
    2 15oz cans of Tomato Sauce
    4 cloves of fresh Garlic
    5 oz container or bag of baby spinach
    6 slices of thick sliced Applewood Smoked Bacon
    Mushrooms (optional)

    For the Mushrooms, slice them and drizzle with olive oil and season with kosher salt and black pepper. Cook in a 375 degree oven for around 10 - 15 minutes. Set aside.



    Step 1) Finely chop the Basil Leaves and the Tarragon.



    Step 2) Combine in a bowl with the canola oil, salt and black pepper.



    Step 3) Add the chicken and coat liberally. Allow to marinate for 30 minutes in the fridge.



    Step 4) Grill the chicken in a grill pan or on a real grill if you have one.





    Step 5) In a sauce pot, combine the garlic and tomato sauce. Stir and simmer as the Rigatoni cooks.



    Step 6) Bring a pot of water seasoned with olive oil and kosher salt. Cook the Rigatoni for about 10 - 15 minutes.

    Step 7) When the tomato sauce begins to simmer, add the cream.



    Step 8) Season the sauce with salt and pepper and continue to stir occasionally to keep a film from forming.



    Step 9) Chop 6 slices of bacon, and render in a large skillet or wok over medium high heat.



    Step 10) Lower the heat to medium, and add the baby spinach. Stir and cook until the spinach begins to wilt.



    Step 11) Add the cooked pasta, sauce (and mushrooms, if you chose) in the wok and stir, being sure to scrape the bottom to distribute the bacon and spinach throughout the pasta mix. Bring to a simmer and cook for about 15 minutes. Salt and pepper to taste during this phase.



    Step 12) Add the pasta to a serving bowl. Slice the chicken and place on top of the pasta. Lightly drizzle with some more sauce.
