    Legend has it that Italian-American restaurateur Caesar Cardini invented the salad in 1924 in Tijuana, Mexico. Cardini owned a restaurant in the tourist destination to "attract Americans frustrated by Prohibition." Over Fourth of July weekend, Cardini threw together a bunch of ingredients he had on hand and served his concoction to his friends. Needless to say, the improvised dish caught on.

    • 1 ounce Anchovy fillets
    • 1 1/2 ounces lemon juice
    • 2 teaspoons garlic
    • 1/2 cup egg yolks
    • 1 tablespoon red wine vinegar
    • 9 1/4 ounces olive oil
    • 3 tablespoons Parmesan cheese
    • 3/4 teaspoon Dry mustard powder
    • 1/2 teaspoon Salt
    • 1/4 teaspoon pepper

    • 1 ounce Anchovy fillets
    • 1 1/2 ounces lemon juice
    • 2 teaspoons garlic
    • 1/2 cup egg yolks
    • 1 tablespoon red wine vinegar
    • 9 1/4 ounces olive oil
    • 3 tablespoons Parmesan cheese
    • 3/4 teaspoon Dry mustard powder
    • 1/2 teaspoon Salt
    • 1/4 teaspoon pepper
    Instructions
    1. Puree the garlic and anchovy until smooth.
    2. Beat yolks in the Hobart mixer until thick.
    3. Add the garlic/ anchovy mixture to the eggs and mix well.
    4. Add mustard powder.
    5. Slowly add oil.
    6. After oil, add the vinegar and lemon juice.
    7. Add cheese and season to taste.
