Chili Rubbed Salmon Recipe - Crystal Palace
The Disney chefs gave salmon a punch of flavor with an ancho chili-brown sugar paste. Drying turns the green poblano pepper into deep reddish-brown ancho chilies. The rich, slightly fruit-flavored ancho is the sweetest of the dried chilies.
Place ancho chilies in boiling water and let stand for 15 minutes.
Remove seeds and place in food processor with water, brown sugar.
Pulse until a smooth paste forms.
Marinate whole side of salmon in chili paste overnight.
Preheat oven to 375 degrees.
Place salmon fillet in an ungreased pan. Season with Kosher salt and cracked black pepper.
Cook for 15-18 minutes or until firm to the touch.
Place on a platter, drizzle with Pistou and serve (recipe below).
Add all ingredients except olive oil and cheese in a food processor and pulse until pureed.
Drizzle olive oil slowly until a paste forms.
