Ingredients
SALMON
- 3 each ancho chilies rehydrated in 1water
- 2 tbsp. brown sugar
- 3 tbsp. canola oil
- 1 side Salmon fillet
- to taste kosher salt
- to taste black pepper fresh ground
PISTOU SAUCE
- 2 cups basil leaves tightly packed
- 3 tsp. Chopped Garlic
- 1 tsp. tsp. kosher salt
- 1/2 tsp. pepper freshly ground
- 1 cup mild olive oil
- 1/2 cup Parmesan cheese freshly grated

Instructions
SALMON
- Place ancho chilies in boiling water and let stand for 15 minutes.
- Remove seeds and place in food processor with water, brown sugar.
- Pulse until a smooth paste forms.
- Drizzle in canola oil.
- Marinate whole side of salmon in chili paste overnight.
- Preheat oven to 375 degrees.
- Place salmon fillet in an ungreased pan. Season with Kosher salt and cracked black pepper.
- Cook for 15-18 minutes or until firm to the touch.
- Place on a platter, drizzle with Pistou and serve (recipe below).
PISTOU SAUCE
- Add all ingredients except olive oil and cheese in a food processor and pulse until pureed.
- Drizzle olive oil slowly until a paste forms.
- Remove and add cheese.
