Crepes Atlas – Restaurant Marrakesh – Epcot
Crepes Atlas: Apple crepes with cinnamon topped with ice cream and almonds.
  1. Preheat oven to 350F.
  2. Grease a baking sheet.
  3. Over medium heat, heat a 5 to 7-inch skillet.
  4. In a large bowl, mix together the eggs, flour, and salt.
  5. Add small amounts of milk, enough to create a smooth paste.
  6. Add in the remaining milk and stir until there are no more lumps.
  7. Whisk in the butter.
  8. Pour 1/4 cup of batter onto the skillet. Move the pan to swirl the batter around to form a thin even layer.
  9. Cook for 1-2 minutes or until the edges curl up and turn slightly brown. Flip over and cook until slightly brown and edges curled up.
  10. Place on a plate and scoop 1/4 cup apple pie down the center.
  11. Roll the crepe and place it on the prepared baking sheet.
  12. In a small bowl, mix together the melted butter, honey, and cinnamon.
  13. Pour the butter mixture over the crepes.
  14. Bake for 5 to 8 minutes.
  15. Drizzle crepes with pan sauce.
  16. Serve with vanilla ice cream.
  17. Sprinkle with cinnamon.
