Caesar Salad Dressing - Narcoossee's - Grand Floridian Resort
Legend has it that Italian-American restaurateur Caesar Cardini invented the salad in 1924 in Tijuana, Mexico. Cardini owned a restaurant in the tourist destination to "attract Americans frustrated by Prohibition." Over Fourth of July weekend, Cardini threw together a bunch of ingredients he had on hand and served his concoction to his friends. Needless to say, the improvised dish caught on.
Puree the garlic and anchovy until smooth.
Beat yolks in the Hobart mixer until thick.
Add the garlic/ anchovy mixture to the eggs and mix well.
After oil, add the vinegar and lemon juice.
Add cheese and season to taste.
