Recipe Chicken Fricassee – Bongo’s Cuban Cafe – Disney Springs
A fricassee is halfway between a saute and a stew. A true classic. The sauce in this dish is pure heaven—you’ll want to pour it over everything.
  1. Place all ingredients except the carrots and potatoes into a large covered pot or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to medium, and cook for 45 minutes, stirring occasionally.
  1. Add the carrots, potatoes and stuffed olives, and cook for an additional 30 minutes or until the carrots and potatoes are fork tender.
  2. Serve over white rice.
