- 24 oz. Chicken Breast
- 1/2 bunch fresh parsley
- 1/2 bunch fresh coriander or cilantro
- 1 tsp. garlic
- 1/2 tsp. Cumin
- 1/2 cup olive oil
- 1 tbsp. lemon juice
- 8 8-inch wooden skewer sticks
- 2 drops yellow food coloring

- Soak your wooden skewers to keep them from setting on fire.
- While they are soaking, you can finely chop the parsley, coriander, and garlic until they are very fine.
- Cut your chicken into cubes of approximately one inch.
- Then mix the chopped ingredients with the cumin, olive oil, lemon juice, food coloring, and chicken.
- Mix the ingredients until they are uniform and each piece of chicken has been coated.
- When the skewers are damp, place the chicken pieces onto them.
- Meanwhile, heat a BBQ grill (or oven broiler) to high heat.
- Cook the chicken kebabs for 5-6 minutes on each side to ensure they are cooked all the way through.
These skewers are great because it keeps the meat from twisting as you turn it.
